How good was Hitmonlee good in Pokémon Go? Not really that great. The big issue is that Machamp outclassed classed everything from the beginning. Both in raids and PvP.
As you might expect from the high attack and good moves really set you up for success in the raid scene and Machamp had both to the point that it wasn't even worth considering using another fighting type until Aura Sphere was introduced to Lucario, months after it's initial release. Counter is the best fighting quick move in the game, and for the longest time, Dyamic Punch was the definite fighting charge move in Go.
That being said, Lucario was a bit more popular in PvP meta, but Machamp still had a nitch in the Master League thanks to Rock Slide acting as amazing coverage to the Pokemon in the meta it was weak to but it's still not the highest thing in any sims or that. But Hitmonlee, nothing. Not even in Great League. I can't even recall a silph leauge, Great League tourneys with very specific ban lists each month, that it was meta relvant in. Reviewing the movepool Hitmonlee has I can see why.
It lacks the stats of Machamp (or the new fighting type king Conkeldurr), the defensive typing of Lucario, and has zero good coverage to it's name. It's quick moves are rock Smash & Break Break, which just aren't as good as counter and it's charge moves also get outclassed by other fighting types. Close combat isn't a bad fighting type move, but Machamp's Cross Chop can be used so much more faster in PvP without the side-effect of lowering defense. Stone edge would make for good coverage for Hitmonlee but it gets outclassed by Machamp's Rock Slide, if only because it can be used more frequently. Plus even Machamp only really gets a good moment in the spotlight in Master League due to Dialgia running free, so it's tough to make Hitmonlee work in lower tiers when even the Pokemon superior to it struggles in those tiers.
